Ingredients

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 cup shredded carrots

1 cup bell peppers (mixed colors, sliced thin)

1 cup cucumbers (thinly sliced)

1 cup baby spinach or mixed greens

1 cup shredded cheese (cheddar or mozzarella)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Prepare the Veggies: Rinse and thinly slice the bell peppers and cucumbers. Peel and grate the carrots. Set aside.

Mix Flavors: In a small bowl, combine the olive oil, garlic powder, onion powder, salt, and pepper. Drizzle this mixture over the shredded carrots and bell peppers. Toss to coat evenly.

Assemble the Wraps: Lay one tortilla flat on a clean surface. Spreading evenly, apply a generous layer of hummus, covering about three-quarters of the tortilla. Layer with spinach, seasoned carrots and bell peppers, sliced cucumbers, and a sprinkle of shredded cheese.

Roll It Up: Starting from the side with the fillings, gently roll the tortilla tightly while tucking in the sides to secure the filling. Continue rolling until you reach the end, then repeat with the remaining tortillas.

Slice and Serve: Cut each wrap into pinwheels, approximately 1-2 inches thick, or leave them whole for older kids. Use toothpicks to secure if needed.

Store or Serve: If not serving immediately, wrap the individual wraps in parchment paper or place them in an airtight container until lunch.
