Ingredients

1 lb boneless, skinless chicken thighs (diced)

1 cup cooked jasmine rice (or your choice of grain)

1 cup broccoli florets

1 red bell pepper (sliced)

1 cup sugar snap peas

1 tablespoon olive oil

2 cloves garlic (minced)

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup hot honey (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon of sesame oil (optional)

Chopped green onions (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a bowl, mix the diced chicken thighs with hot honey, soy sauce, apple cider vinegar, garlic, smoked paprika, salt, and black pepper. Let it marinate for at least 30 minutes in the refrigerator (or overnight for deeper flavor).

Prepare the Vegetables: While the chicken marinates, prepare the broccoli, red bell pepper, and sugar snap peas. Set them aside.

Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Once hot, add the marinated chicken, reserving any excess marinade. Sauté the chicken for about 5-7 minutes, or until it’s cooked through and caramelized on the outside.

Add Vegetables: Add in the broccoli, red bell pepper, and sugar snap peas to the skillet with the chicken. Stir-fry for an additional 5 minutes or until the vegetables are tender-crisp.

Make Hot Honey Sauce: While the chicken and vegetables are cooking, pour in the reserved marinade. Let it simmer for 2-3 minutes to thicken slightly. If you want a richer flavor, stir in sesame oil just before serving.

Assemble Bowls: Divide cooked jasmine rice among serving bowls. Top with the hot honey chicken and sautéed vegetables.

Garnish: Sprinkle the bowls with chopped green onions and sesame seeds for added flavor and presentation.

Serve: Drizzle a bit more hot honey over the top for extra sweetness and spice. Enjoy your delicious Hot Honey Chicken Bowls!
