Honey Glazed Salmon Foil Packs

Ingredients
  

4 salmon fillets (6 oz each)

1/4 cup honey

3 tablespoons soy sauce (low-sodium preferred)

2 tablespoons Dijon mustard

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

1 zucchini, thinly sliced

1 bell pepper (any color), sliced

1 cup cherry tomatoes, halved

Fresh parsley or cilantro, for garnish (optional)

Lemon wedges, for serving

Instructions
 

Prep the Marinade: In a small bowl, whisk together the honey, soy sauce, Dijon mustard, olive oil, minced garlic, and grated ginger until well combined. Set aside.

    Prepare the Foil Packs: Cut four large pieces of aluminum foil (about 12x12). Place a salmon fillet in the center of each piece of foil.

      Season the Salmon: Drizzle each salmon fillet with the honey marinade, ensuring they are well-coated. Season with salt and pepper to taste.

        Add the Vegetables: Divide the sliced zucchini, bell pepper, and cherry tomatoes evenly around the salmon fillets in the foil packs. Drizzle any remaining marinade over the vegetables.

          Seal the Foil Packs: Carefully fold the edges of each foil square up and over the salmon and vegetables to create a sealed pack. Make sure there are no gaps for the steam to escape.

            Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 400°F (200°C).

              Cook the Foil Packs: Place the foil packs on the grill or in the oven. Cook for about 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

                Serve: Carefully open the foil packs (watch out for steam) and garnish with fresh parsley or cilantro if desired. Serve with lemon wedges on the side for an extra burst of flavor!
