Ingredients

1 lb ground chicken

2 tbsp honey

3 tbsp soy sauce (low sodium preferred)

2 cloves garlic, minced

1 inch piece ginger, grated

1/2 cup bell pepper, finely diced (red or yellow for color)

1/4 cup green onions, chopped

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp chili paste (optional, for heat)

1 head of butter or romaine lettuce, leaves separated

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Instructions

Prepare the Sauce: In a small bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, sesame oil, rice vinegar, and chili paste (if using). Set aside.

Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Cook for about 5-7 minutes, breaking it up with a spatula until fully cooked and no longer pink.

Add Vegetables: Stir in the diced bell pepper and cook for an additional 2-3 minutes until the pepper is slightly tender.

Add the Sauce: Pour the prepared honey garlic mixture over the cooked chicken and vegetables. Stir well to combine, and let it simmer for 3-5 minutes, allowing the sauce to thicken slightly and coat the chicken evenly.

Assemble Lettuce Cups: Take a lettuce leaf and spoon a generous amount of the honey garlic chicken mixture into the center of the leaf.

Garnish: Sprinkle with chopped green onions, sesame seeds, and fresh cilantro if desired. Serve immediately.

Enjoy Your Creation: These delicious cups are best enjoyed fresh but can be stored in an airtight container in the fridge for up to 3 days.
