Ingredients

500g chicken thighs, boneless and skinless

1/4 cup honey

1/4 cup soy sauce (low-sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon sesame oil

Salt and pepper, to taste

2 tablespoons cornstarch (optional, for thicker sauce)

2 tablespoons water (if using cornstarch)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, salt, and pepper. Mix well until combined. Reserve 1/4 cup of the marinade for later use. Add the chicken thighs to the bowl and ensure they are well coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

Preheat Your Pan: Heat a large skillet or wok over medium-high heat. Add a splash of oil to the pan.

Cook the Chicken: Once the pan is hot, remove the chicken from the marinade (discard the marinade that was in contact with raw chicken) and add it to the skillet. Sear the chicken thighs for about 5-7 minutes on each side, until golden brown and cooked through (internal temperature should reach 75°C/165°F).

Prepare the Sauce: While the chicken is cooking, take the reserved marinade and bring it to a boil in a small saucepan. If you prefer a thicker sauce, mix the cornstarch and water together to create a slurry, then add it to the boiling marinade. Stir well until the sauce thickens.

Glaze the Chicken: Once the chicken is cooked, reduce the heat to low and pour the thickened sauce over the chicken. Toss to coat and let it cook for another minute or so, allowing the flavors to meld.

Serve: Transfer the honey garlic chicken to a serving platter. Garnish with sliced green onions and sesame seeds. Serve hot, alongside steamed rice or your favorite veggies.
