1 lb Brussels sprouts, halved

3 tbsp olive oil

1/4 cup balsamic vinegar

2 tbsp honey

1 tsp Dijon mustard

2 cloves garlic, minced

Salt and pepper, to taste

1/4 tsp red pepper flakes (optional)

2 tbsp chopped fresh parsley, for garnish

Instructions
 

Preheat your oven: Preheat your oven to 400°F (200°C).

    Prepare the Brussels sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.

      Roast the sprouts: Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until they are tender and caramelized, stirring halfway through.

        Make the glaze: While the Brussels sprouts are roasting, prepare the honey balsamic glaze. In a small saucepan over medium heat, combine balsamic vinegar, honey, Dijon mustard, minced garlic, and red pepper flakes (if using). Cook for about 5-7 minutes until the mixture thickens slightly.

          Combine: Once the Brussels sprouts are done roasting, remove them from the oven and transfer them to a large bowl. Pour the honey balsamic glaze over the roasted Brussels sprouts and toss until they are well coated.

            Garnish and serve: Transfer the glazed Brussels sprouts to a serving dish, sprinkle with fresh parsley, and serve warm. Enjoy!
