Ingredients
  

1 pound ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

3 cups mixed vegetables (frozen or fresh, such as peas, carrots, and corn)

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

1 can (10.5 oz) cream of mushroom soup

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

4 medium potatoes, sliced thinly

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess grease, if necessary.

      Add the diced onion and minced garlic to the skillet. Sauté for about 3-5 minutes until the onion is translucent and fragrant.

        Stir in the mixed vegetables, diced tomatoes, kidney beans, cream of mushroom soup, Italian seasoning, paprika, and season with salt and pepper. Mix well to combine all ingredients.

          In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom.

            Spread half of the meat mixture over the potatoes, then layer the remaining sliced potatoes on top.

              Top with the rest of the meat mixture, covering the potatoes completely.

                Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

                  Remove the foil and sprinkle the shredded cheddar cheese on top. Return to the oven and bake uncovered for an additional 15 minutes or until the potatoes are tender and the cheese is melted and bubbly.

                    Let it cool slightly, garnish with fresh parsley if desired, and serve warm.
