High Protein Pepperoni Pizza Rolls

1 cup whole wheat flour

1/2 cup protein powder (whey or plant-based)

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

1/4 teaspoon salt

1/3 cup Greek yogurt (plain, non-fat)

1/4 cup water (add more as needed)

1 cup low-fat shredded mozzarella cheese

1/2 cup turkey or beef pepperoni slices (finely chopped)

1/4 cup pizza sauce (for dipping)

1 tablespoon olive oil (for brushing)

Optional: crushed red pepper flakes (for garnish)

Instructions
 

Preheat and Prepare: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine whole wheat flour, protein powder, baking powder, garlic powder, Italian seasoning, and salt. Whisk together until combined.

      Combine Wet Ingredients: In another bowl, mix the Greek yogurt and water until smooth. Gradually add the wet mixture into the dry ingredients while stirring until the dough starts to form. If needed, add more water, a tablespoon at a time, until the dough is soft but not sticky.

        Knead Dough: Transfer the dough to a lightly floured surface. Knead the dough gently for 1-2 minutes until smooth.

          Roll Out Dough: Use a rolling pin to flatten the dough into a rectangle, about 1/4 inch thick.

            Add Fillings: Sprinkle the shredded mozzarella cheese and chopped pepperoni evenly over the dough rectangle.

              Roll it Up: Starting from one end, carefully roll the dough tightly into a log. Pinch the edges to seal.

                Cut into Rolls: Slice the log into 1-inch thick pieces and place them cut side up on the prepared baking sheet.

                  Brush with Olive Oil: Lightly brush the tops with olive oil to help them crisp up and sprinkle with red pepper flakes if desired.

                    Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and the cheese is bubbly.

                      Serve and Enjoy: Let the pizza rolls cool for a few minutes. Serve warm with pizza sauce for dipping.
