Herby Feta Spinach Stuffed Chicken

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 tablespoons fresh dill, chopped

2 tablespoons fresh parsley, chopped

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Toothpicks or kitchen twine for securing the chicken

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine chopped spinach, crumbled feta cheese, softened cream cheese, dill, parsley, minced garlic, lemon juice, salt, pepper, and red pepper flakes (if using). Mix well until all ingredients are evenly incorporated.

      Prepare the Chicken: Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to about 1/2 inch thick for even cooking.

        Stuff the Chicken: Take a portion of the filling mixture and place it in the center of each chicken breast. Fold the chicken over to enclose the filling and secure with toothpicks or tie with kitchen twine.

          Season the Chicken: Rub the outside of the stuffed chicken breasts with olive oil and season with salt and pepper.

            Sear the Chicken: In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts and cook for about 3-4 minutes on each side, or until golden brown.

              Bake in the Oven: Once browned, transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

                Rest and Serve: Once done, remove the skillet from the oven, and let the chicken rest for 5 minutes. Carefully remove toothpicks or twine before serving. Serve alongside your favorite side dishes for a complete meal.
