Herbed Ricotta Zucchini Rollatini

3 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese (divided)

1/2 cup grated Parmesan cheese

1 large egg

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 cup marinara sauce (store-bought or homemade)

Olive oil for drizzling

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Using a mandoline or a sharp knife, slice the zucchinis lengthwise into thin, even slices (about 1/8 inch thick). Place the slices on a baking sheet, sprinkle with salt, and let them sit for about 10-15 minutes to drain excess moisture. Pat dry with paper towels.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, chopped basil, chopped parsley, minced garlic, salt, and pepper. Mix until well combined and set aside.

      Assemble the Rollatini: On a clean work surface, take a zucchini slice and spoon about 1-2 tablespoons of the ricotta mixture onto one end. Roll the zucchini tightly around the filling and place it seam-side down in a baking dish. Repeat with the remaining zucchini slices and filling until everything is used up.

        Add the Sauce: Spread a thin layer of marinara sauce on the bottom of the baking dish to prevent sticking. Arrange the zucchini rollatini in the dish, overlapping them slightly if needed. Pour the remaining marinara sauce over the rollatini and sprinkle the remaining mozzarella cheese on top.

          Bake: Drizzle a little olive oil over the top of the dish and cover it with aluminum foil. Bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes or until the cheese is bubbly and golden.
