Herbed Feta Stuffed Peppers

4 large bell peppers (any color)

1 cup crumbled feta cheese

1/2 cup cooked quinoa (or rice)

1/4 cup diced red onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh dill, chopped

1 tablespoon lemon juice

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 tablespoon olive oil

1/2 cup cherry tomatoes, halved (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

    Make the Filling: In a large mixing bowl, combine the crumbled feta cheese, cooked quinoa (or rice), diced red onion, minced garlic, chopped parsley, and chopped dill. Mix well. Add the lemon juice, dried oregano, black pepper, and salt. Stir until the mixture is well combined. If using, gently fold in the halved cherry tomatoes.

      Stuff the Peppers: Drizzle olive oil over the inside of the bell peppers. Using a spoon, carefully stuff each pepper with the feta mixture, packing it down gently but not too tightly.

        Bake: Once all the peppers are stuffed, cover the baking dish loosely with aluminum foil. Bake in the preheated oven for about 25-30 minutes, removing the foil for the last 10 minutes, or until the peppers are tender and the filling is heated through.

          Garnish and Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
