For the Dough:

3 ½ cups all-purpose flour (plus extra for dusting)

1 packet (2 ¼ teaspoons) instant yeast

1 tablespoon granulated sugar

1 teaspoon salt

1 cup warm milk (about 110°F)

¼ cup unsalted butter, melted

1 large egg

For the Filling:

½ cup unsalted butter, softened

4 cloves garlic, minced

1 tablespoon fresh rosemary, minced

1 tablespoon fresh thyme, minced

1 tablespoon fresh parsley, minced

½ teaspoon salt

¼ teaspoon black pepper

½ cup grated Parmesan cheese (optional)

For Brushing:

2 tablespoons melted butter

1 teaspoon dried oregano (for garnish)

Instructions
 

Prepare the Dough: In a large mixing bowl, combine 2 cups of flour, instant yeast, sugar, and salt. In a separate bowl, mix warm milk, melted butter, and egg. Gradually add the wet ingredients to the dry mixture. Stir until combined.

    Form the Dough: Slowly add the remaining flour, ¼ cup at a time, until the dough starts to pull away from the sides of the bowl. Transfer the dough onto a floured surface and knead for about 5-7 minutes, until smooth and elastic.

      First Rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.

        Prepare the Filling: In a small bowl, mix together softened butter, minced garlic, rosemary, thyme, parsley, salt, pepper, and Parmesan cheese (if using) until well combined.

          Roll the Dough: Once the dough has risen, punch it down to release air. Roll it out into a rectangle (approx. 12x18 inches) on a lightly floured surface.

            Add the Filling: Spread the herb and garlic mixture evenly over the dough rectangle, leaving a small border around the edges.

              Shape the Rolls: Starting from one long side, carefully roll the dough into a tight log. Seal the edge by pinching it together with your fingers.

                Cut the Rolls: Cut the log into 1.5-inch slices. Place the rolls cut-side up in a greased baking dish, leaving space between them for expansion.

                  Second Rise: Cover the dish with a towel and let the rolls rise for another 30 minutes.

                    Preheat Oven: Preheat your oven to 375°F (190°C) while the rolls are rising.

                      Bake the Rolls: Once the rolls have risen, brush them with melted butter and sprinkle with dried oregano. Bake in the preheated oven for 20-25 minutes, or until golden brown on top.

                        Cool & Serve: Allow the rolls to cool slightly in the baking dish before serving. They are best enjoyed warm, either plain or with a side of olive oil for dipping.
