Healthy Pumpkin Protein Muffins

1 cup canned pumpkin puree (unsweetened)

1/2 cup Greek yogurt (plain, low-fat)

1/2 cup almond milk (or milk of choice)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup rolled oats (blended into oat flour)

1/2 cup vanilla protein powder (can substitute with a plant-based protein)

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup walnuts or pecans (chopped, optional)

1/3 cup dark chocolate chips or raisins (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the pumpkin puree, Greek yogurt, almond milk, honey (or maple syrup), and vanilla extract. Whisk together until fully combined and smooth.

      In a separate bowl, mix the dry ingredients: blend rolled oats into flour, then whisk in the protein powder, baking soda, baking powder, cinnamon, nutmeg, and salt until well combined.

        Gradually add the dry mixture to the wet mixture. Stir until just combined, being careful not to overmix. If desired, fold in the chopped nuts and chocolate chips or raisins for added texture and sweetness.

          Scoop the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.

            Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Once baked, remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
