Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/3 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup dark chocolate chips (preferably 70% cocoa or higher)

1/4 cup chopped walnuts or pecans

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

Pinch of salt

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mash Bananas: In a large mixing bowl, mash the ripe bananas until smooth, leaving a few small chunks for added texture if desired.

Mix Wet Ingredients: Add the almond butter, honey (or maple syrup), and vanilla extract to the mashed bananas. Mix well until everything is fully combined.

Combine Dry Ingredients: In another bowl, mix the rolled oats, baking powder, cinnamon, and salt. Stir until evenly combined.

Merge Mixtures: Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Fold in the dark chocolate chips and chopped nuts.

Scoop and Shape: Using a spoon or cookie scoop, drop heaping tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of the spoon.

Bake: Bake in the preheated oven for 12-15 minutes or until the cookies are golden brown around the edges and slightly soft in the center.

Cool: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy these deliciously healthy cookies warm, or store them in an airtight container for up to a week.
