Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 fresh pineapple, peeled, cored, and cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

3 cloves garlic, minced

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated

1 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Skewers (wooden or metal)

Instructions

Prepare the Marinade: In a medium bowl, combine the soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, crushed red pepper flakes (if using), and a pinch of salt and pepper. Whisk until the sugar is dissolved.

Marinate the Chicken: Place the cubed chicken in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning. This is optional if you’re using metal skewers.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

Assemble the Kebabs: Remove the chicken from the marinade and thread the chicken, pineapple chunks, red bell pepper, green bell pepper, and red onion onto the skewers, alternating ingredients for a colorful presentation.

Grill the Kebabs: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C), and the vegetables are slightly charred.

Glaze (Optional): During the last few minutes of grilling, brush the remaining marinade over the kebabs for added flavor. Be sure to discard any marinade that has come into contact with raw chicken.

Serve: Carefully remove the skewers from the grill and let them rest for a couple of minutes. Serve the Hawaiian Pineapple Chicken Kebabs warm with extra pineapple chunks and your favorite dipping sauce.
