Ham and Spinach Egg Muffins

6 large eggs

1 cup fresh spinach, chopped

1 cup cooked ham, diced (preferably black forest or honey ham)

½ cup shredded cheddar cheese

½ cup milk

1 teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil (for greasing muffin tin)

Optional: sliced green onions for garnish

Instructions
 

Preheat you Oven: Preheat your oven to 350°F (175°C) and lightly grease a standard muffin tin with olive oil. You can also use muffin liners for easy removal.

    Whisk the Eggs: In a large mixing bowl, crack in the 6 large eggs. Add ½ cup of milk, 1 teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon salt, and ¼ teaspoon black pepper. Whisk everything together until well combined and slightly frothy.

      Combine the Fillings: Fold in the chopped spinach, diced ham, and shredded cheddar cheese into the egg mixture. Make sure all the ingredients are evenly distributed within the mixture.

        Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about ¾ full. This will allow room for rising while baking.

          Bake to Perfection: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg muffins are set and a toothpick inserted into the center comes out clean.

            Cool and Serve: Once baked, allow the muffins to cool in the tin for about 5 minutes. Then, using a knife, gently loosen the edges and pop each muffin out. Serve warm, garnished with sliced green onions if desired.

              Storage Tip: Store any leftovers in an airtight container in the refrigerator for up to 4 days. These muffins can also be frozen for up to 3 months; just reheat them in the oven or microwave when ready to enjoy!
