4 boneless, skinless chicken breasts

1 cup fresh pineapple, diced

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, sliced

1 cup coconut milk

2 tablespoons soy sauce (or tamari for gluten-free option)

1 tablespoon honey or agave syrup

1 teaspoon ground ginger

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, mix together the soy sauce, honey, ginger, smoked paprika, salt and pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Sauce: In a large pan, heat the olive oil over medium heat. Add the garlic and onion, cooking until the onion is translucent. Stir in the sliced red bell pepper and cook for another 3-4 minutes until soft.

      Cook the Chicken: Remove the marinated chicken breasts from the marinade (reserve the marinade for later) and place them in the pan. Sear the chicken on each side for about 5 minutes until golden brown.

        Add Coconut Milk and Pineapple: Pour in the coconut milk and add the diced pineapple, along with the reserved marinade. Bring the mixture to a gentle simmer, cover, and cook for about 15-20 minutes until the chicken is cooked through and the flavors meld together.
