1/4 cup chia seeds

1 cup unsweetened almond milk (or any plant-based milk)

2 tablespoons unsweetened cocoa powder

2-3 tablespoons pure maple syrup (to taste)

1/2 teaspoon vanilla extract

Pinch of sea salt

Fresh berries (for topping)

Shaved dark chocolate or cocoa nibs (optional, for garnish)

Instructions
 

In a medium-sized mixing bowl, combine the chia seeds, unsweetened almond milk, cocoa powder, maple syrup, vanilla extract, and a pinch of sea salt.

    Whisk the mixture thoroughly until all the ingredients are well incorporated. Make sure there are no clumps of cacao or chia seeds.

      Let the mixture sit for 5-10 minutes, then whisk again to break up any clumps that may have formed.

        Cover the bowl with plastic wrap or transfer the mixture into serving jars. Refrigerate for at least 2 hours, or ideally overnight, to allow the chia seeds to absorb the liquid and thicken.

          Once set, give the pudding a good stir before serving.

            Serve chilled and top with fresh berries and a sprinkling of shaved dark chocolate or cocoa nibs if desired. Enjoy this rich and nutritious treat!
