1/4 cup chia seeds

1 cup unsweetened almond milk (or any plant-based milk of your choice)

2 tablespoons unsweetened cocoa powder

2 tablespoons maple syrup (or agave nectar for vegan)

1 teaspoon vanilla extract

A pinch of sea salt

Fresh berries for topping (strawberries, blueberries, or raspberries)

Optional: dark chocolate shavings or chopped nuts for added texture

Instructions
 

In a medium-sized mixing bowl, combine the chia seeds, unsweetened almond milk, cocoa powder, maple syrup, vanilla extract, and a pinch of sea salt.

    Whisk the mixture thoroughly until all the ingredients are well combined and there are no lumps of cocoa powder.

      Let the mixture sit for about 5 minutes, then whisk again to prevent the chia seeds from clumping together.

        Cover the bowl with plastic wrap or transfer the mixture to an airtight container.

          Refrigerate the mixture for at least 2 hours or preferably overnight to allow the chia seeds to absorb the liquid and thicken into a pudding-like consistency.

            Once set, give the pudding a good stir. If it’s too thick, feel free to add a splash of almond milk to reach your desired consistency.

              Portion the pudding into serving cups or bowls. Top with fresh berries and, if desired, sprinkle dark chocolate shavings or chopped nuts for an extra treat.
