Ingredients

2 medium zucchini, sliced into long strips

1 cup crumbled feta cheese

1/4 cup Greek yogurt

1 tablespoon garlic, minced

1 tablespoon olive oil

1 teaspoon lemon juice

1/2 teaspoon dried oregano

Salt and pepper, to taste

4 whole wheat or spinach wraps

Fresh dill or parsley, for garnish (optional)

Instructions

Prep the Marinade: In a small bowl, mix together the olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper. This will be your marinade for the zucchini.

Marinate the Zucchini: Brush the zucchini strips with the marinade on both sides and let them sit for about 15-20 minutes to absorb the flavors.

Grill the Zucchini: Preheat your grill or grill pan over medium-high heat. Place the marinated zucchini strips on the grill and cook for about 3-4 minutes on each side, or until they have nice grill marks and are tender. Remove from the grill and allow them to cool slightly.

Prepare the Yogurt Sauce: In a separate bowl, mix the Greek yogurt with a pinch of salt and pepper. You can also add extra lemon juice if desired for a zesty kick.

Assemble the Wraps: Lay out a whole wheat or spinach wrap on a clean surface. Spread a generous spoonful of the yogurt sauce over the wrap. Place a few grilled zucchini strips diagonally across the center, then sprinkle with crumbled feta cheese and garnish with fresh dill or parsley if using.

Roll It Up: Carefully roll the wrap tightly from one end to the other, ensuring the filling stays inside. Optionally, you can slice the wrap in half for easier eating.

Serve: Arrange the wraps on a platter and serve them with extra yogurt on the side for dipping. Enjoy your fresh and flavorful Grilled Zucchini Feta Wraps!
