4 medium zucchinis

1 pound ground turkey sausage (mild or spicy, based on preference)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Prep the Zucchini: Preheat your grill to medium heat. Slice the zucchinis in half lengthwise and scoop out the center flesh using a spoon, creating a boat-like shape. Brush the insides lightly with olive oil and sprinkle with salt and pepper. Set aside.

    Cook the Turkey Sausage: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the finely chopped onion. Sauté until translucent (about 3-4 minutes). Add the minced garlic and cook for an additional minute until fragrant.

      Add Sausage and Veggies: Add the ground turkey sausage to the skillet. Cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes). Once the sausage is cooked through, fold in the cherry tomatoes, Italian seasoning, and red pepper flakes. Cook for another 2-3 minutes until the tomatoes start to soften.

        Stuff the Zucchini Boats: Remove the skillet from heat. Stir in half of the mozzarella cheese and the Parmesan cheese. Taste and adjust seasoning with salt and pepper if necessary. Spoon the turkey sausage mixture generously into each zucchini boat.

          Grill the Zucchini Boats: Place the filled zucchini boats on the preheated grill, cut side up. Grill for about 10-12 minutes or until the zucchinis are tender. In the last 2 minutes of grilling, sprinkle the remaining mozzarella cheese on top of the zucchini boats to melt.
