1 red bell pepper, sliced

1 zucchini, sliced into thin rounds

1 yellow squash, sliced into thin rounds

1 cup of cherry tomatoes, halved

1 red onion, sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup fresh spinach leaves

¼ cup crumbled feta cheese (optional)

Fresh herbs (like parsley or cilantro), for garnish

Prep the Vegetables: In a large bowl, toss the sliced red bell pepper, zucchini, yellow squash, cherry tomatoes, and red onion with the olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
