Grilled Veggie Flatbread

Ingredients
  

2 large whole wheat flatbreads

1 medium zucchini, sliced into thin rounds

1 red bell pepper, sliced into strips

1 cup cherry tomatoes, halved

1 small red onion, sliced into rings

1 cup of fresh spinach leaves

1/2 cup feta cheese, crumbled

3 tablespoons olive oil

2 teaspoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchini, bell pepper, cherry tomatoes, and red onion. Drizzle with 2 tablespoons of olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper. Toss well to coat the vegetables evenly.

    Grill the Veggies: Preheat your grill or grill pan over medium-high heat. Once hot, add the seasoned vegetables. Grill for 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and let them cool slightly.

      Assemble the Flatbreads: Brush the remaining 1 tablespoon of olive oil over each flatbread. Spread a layer of fresh spinach leaves on top of the flatbreads, followed by the grilled vegetables. Sprinkle feta cheese evenly over the veggies.

        Grill the Flatbreads: Place the assembled flatbreads on the grill (or in a grill pan) and cook for about 2-3 minutes, until the flatbreads are warm and slightly crispy, taking care not to burn them. You can also use a grill press or cover them with a lid to help melt the cheese.
