1 lb (450g) boneless, skinless chicken thighs or breasts, cut into 1-inch cubes

1/2 cup soy sauce (low-sodium preferred)

1/4 cup brown sugar

2 tablespoons honey

2 tablespoons rice vinegar

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon water (optional, for thickening)

1-2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Bamboo or metal skewers

Marinate the Chicken: In a large bowl, combine the soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger. Whisk until the sugar is dissolved. Add the chicken pieces, making sure they are well coated. Cover and marinate in the fridge for at least 30 minutes (or up to 4 hours for more flavor).

    Prepare Skewers: If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, they're ready to go!

      Make the Sauce (optional): If you like a thicker sauce to drizzle on your skewers, combine the remaining marinade in a small saucepan. Bring to a boil over medium heat, then reduce to a simmer. Mix the cornstarch with water to create a slurry, then whisk it into the saucepan. Cook until thickened (about 2-3 minutes), then set aside.

        Assemble Skewers: Thread the marinated chicken pieces onto the skewers, ensuring they're snug but not overcrowded.

          Grill the Skewers: Preheat your grill to medium-high heat. Once hot, place the chicken skewers on the grill.
