Grilled Tenderloin with Creamy Dill Sauce

2 lbs beef tenderloin, trimmed

2 tablespoons olive oil

Salt and pepper to taste

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 cup sour cream

1/2 cup mayonnaise

3 tablespoons fresh dill, chopped

1 tablespoon capers, rinsed and chopped

1 teaspoon lemon zest

Fresh dill sprigs for garnish

Instructions
 

Prepare the Marinade:

    In a small bowl, mix together the olive oil, salt, pepper, garlic powder, smoked paprika, Dijon mustard, and lemon juice to form a marinade.

      Marinate the Tenderloin:

        Rub the marinade all over the beef tenderloin. Place it in a resealable bag or in a shallow dish and let it marinate in the refrigerator for at least 1 hour, or up to 8 hours for enhanced flavor.

          Preheat the Grill:

            Preheat your grill to medium-high heat (about 400°F / 200°C). Make sure the grates are clean and lightly oiled.

              Prepare the Creamy Dill Sauce:

                While the grill is heating, whisk together the sour cream, mayonnaise, chopped dill, capers, lemon zest, and a pinch of salt in a bowl. Adjust seasoning to taste, and refrigerate until ready to serve.

                  Grill the Tenderloin:

                    Remove the tenderloin from the marinade and let it rest at room temperature for about 15 minutes. Grill the tenderloin for about 20-25 minutes, turning every 5-7 minutes, until it reaches your desired level of doneness (135°F / 57°C for medium-rare).

                      Rest the Meat:

                        Once grilled, remove the tenderloin from the grill and let it rest for 10 minutes under tented foil. This ensures that the juices are locked in.

                          Slice and Serve:

                            Slice the tenderloin against the grain into medallions. Serve drizzled with the creamy dill sauce and garnish with fresh dill sprigs. Pair it with your favorite sides, such as roasted vegetables or a fresh salad.
