Grilled School Lunch Sandwich Melt

Ingredients
  

4 slices of whole grain bread

4 tablespoons of unsalted butter, softened

4 slices of cheddar cheese

4 slices of turkey breast

2 tablespoons of pesto sauce

1 ripe tomato, sliced

Fresh arugula or spinach leaves

Salt and pepper, to taste

Optional: 2 tablespoons of mayo for spreading

Instructions
 

Prepare the Bread: Spread one tablespoon of softened butter on one side of each slice of bread. This will help create a golden crust when grilling.

    Assemble the Sandwich: Place two slices of bread, butter side down, on a clean cutting board. On each slice, layer the following ingredients in order: a slice of cheddar cheese, one slice of turkey breast, a slice of tomato, a layer of fresh arugula or spinach, another slice of cheddar cheese, and a drizzle of pesto sauce. Top with the remaining two slices of bread, butter side up.

      Grill the Sandwich: Heat a non-stick skillet or griddle over medium heat. Carefully place the sandwiches in the skillet. Grill for about 4-5 minutes on one side until golden and crispy.

        Flip and Finish: Gently flip the sandwiches using a spatula, pressing down slightly to ensure they grill evenly. Cook for another 4-5 minutes until the second side is golden and the cheese is melted. If you like, you can cover the skillet with a lid for the last couple of minutes to help melt the cheese.

          Serve: Remove the sandwiches from the skillet and let them cool for a minute. Slice each sandwich in half diagonally and serve warm, with a side of veggie sticks or fruit for a well-balanced lunch!
