Ingredients

4 whole-wheat pita breads

1 cup marinara sauce

2 cups shredded mozzarella cheese

1 cup sliced bell peppers (red, yellow, green)

1 cup sliced mushrooms

1/2 cup black olives, sliced

1 teaspoon dried oregano

1 teaspoon garlic powder

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Salt and pepper to taste

Instructions

Prepare the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly hot.

Prep the Pitas: Brush one side of each pita bread with olive oil. This will help them get that lovely crispiness on the grill.

Grill the Pitas: Place the pitas oil-side down on the grill. Grill for about 2-3 minutes until they start to get grill marks and become slightly crisp. Flip them over.

Add Sauce and Toppings: Spread approximately 1/4 cup of marinara sauce on the grilled side of each pita. Add around 1/2 cup of shredded mozzarella cheese on top, followed by your sliced bell peppers, mushrooms, and black olives. Sprinkle with dried oregano, garlic powder, salt, and pepper.

Finish Grilling: Close the lid of the grill and cook for an additional 4-5 minutes, or until the cheese is melted and bubbly, and the edges of the pita are crispy.

Garnish and Serve: Remove from the grill and let cool for a minute. Garnish with fresh basil leaves if you like. Slice into wedges and serve warm.
