Ingredients

2 slices of sourdough bread

1 cup fresh mozzarella cheese, sliced

1 medium ripe tomato, sliced

6 fresh basil leaves

1 tablespoon pesto

2 tablespoons balsamic glaze

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Prep the Ingredients: Start by slicing the mozzarella and tomato. Set them aside.

Assemble the Sandwich: On one slice of sourdough bread, spread the pesto evenly. Layer the fresh mozzarella, tomato slices, and basil leaves on top. Season with a pinch of salt and pepper, then drizzle with balsamic glaze. Place the second slice of sourdough on top to form a sandwich.

Heat the Grill Pan: Preheat a non-stick grill pan over medium heat. Add the olive oil and allow it to warm for a minute.

Grill the Sandwich: Carefully place the sandwich in the grill pan. Cook for about 3-4 minutes until the bottom bread is golden and crispy. Press down slightly with a spatula for an even grill.

Flip and Finish Cooking: Carefully flip the sandwich and grill the other side for another 3-4 minutes, until the cheese is melted and gooey, and the bread is beautifully toasted.

Serve: Remove from the pan and let it cool for a minute. Cut the sandwich in half and serve it warm, garnished with extra basil and a drizzle of balsamic glaze if desired.
