Grilled Mango Pineapple Chicken

4 boneless, skinless chicken breasts

1 ripe mango, peeled and diced

1 cup fresh pineapple, diced

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust for heat)

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley, for garnish

Marinate the Chicken: In a large bowl, combine the soy sauce, honey, lime juice, minced garlic, ginger, cumin, cayenne pepper, salt, and pepper. Whisk until well combined. Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes to 2 hours for maximum flavor.

    Prepare the Grilled Fruit: While the chicken marinates, prepare the mango and pineapple. Toss the diced mango and pineapple in a bowl with olive oil, a pinch of salt, and a dash of cayenne pepper for an extra kick.

      Preheat the Grill: Preheat your grill (or grill pan) to medium-high heat. Lightly oil the grill grates to prevent sticking.
