Grilled Halloumi and Veggie Skewers

250g halloumi cheese, cut into 2 cm cubes

1 red bell pepper, cut into 2 cm pieces

1 yellow bell pepper, cut into 2 cm pieces

1 medium zucchini, sliced into thick rounds

1 red onion, cut into wedges

10 cherry tomatoes

4 tablespoons olive oil

1 tablespoon fresh lemon juice

2 teaspoons dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes prior)

Instructions
 

Marinate the Veggies: In a large bowl, combine the olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Whisk together until well blended. Add the chopped veggies (bell peppers, zucchini, and onion) to the bowl and toss until they are evenly coated. Let them marinate for at least 20 minutes while you prepare the skewers.

    Prepare the Halloumi: In a separate bowl, add the halloumi cubes and drizzle with a little olive oil. If desired, sprinkle some extra oregano or seasoning over them. This step helps to prevent sticking and enhances flavor.

      Assemble the Skewers: Start by threading a cherry tomato onto the skewer, followed by a piece of halloumi, then a piece of red bell pepper, zucchini, red onion, and yellow bell pepper. Repeat the pattern until the skewer is filled, leaving some space at each end for easy handling. Repeat for the remaining skewers.

        Preheat the Grill: Preheat your grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.

          Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred, and the halloumi is golden brown and crisp on the edges.

            Serve: Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Serve warm, drizzled with a bit more olive oil or a squeeze of fresh lemon juice for added zest.
