For the Chicken:

4 boneless, skinless chicken breasts

4 tablespoons olive oil

2 lemons (juiced and zested)

4 garlic cloves (minced)

2 teaspoons dried oregano

1 teaspoon salt

½ teaspoon black pepper

For the Whipped Feta:

8 ounces feta cheese (crumbled)

¼ cup Greek yogurt

2 tablespoons extra virgin olive oil

1 tablespoon lemon juice

1 tablespoon fresh dill (chopped, plus more for garnish)

Salt and pepper to taste

For Serving:

Fresh vegetables (like cucumbers, cherry tomatoes, and red onion)

Pita bread (optional)

Fresh lemon wedges

Marinate the Chicken: In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 30 minutes (or up to 4 hours for best flavor).

    Prepare the Whipped Feta: In a food processor, combine crumbled feta cheese, Greek yogurt, olive oil, lemon juice, and fresh dill. Blend until smooth and creamy. Taste and season with additional salt and pepper if needed. Transfer to a bowl and set aside.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

        Grill the Chicken: Remove the chicken from the marinade and discard the leftover marinade. Place the chicken on the hot grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from the grill and let rest for 5 minutes.

          Plate and Serve: Slice the grilled chicken and serve on a platter with whipped feta on the side. Garnish with fresh dill. Accompany with fresh vegetables and pita bread, if using. Squeeze fresh lemon juice over the top for added flavor.
