Grilled Chicken & Watermelon Salad

2 boneless, skinless chicken breasts

4 cups seedless watermelon, cubed

5 cups mixed salad greens (arugula, spinach, and romaine)

1/2 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup balsamic vinaigrette

2 tablespoons olive oil

Salt and pepper, to taste

Marinate the Chicken: In a bowl, mix olive oil, salt, and pepper. Coat the chicken breasts with the mixture and let them marinate for at least 30 minutes for maximum flavor.

    Grill the Chicken: Preheat your grill on medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes per side, or until they are cooked through and have nice grill marks. Use a meat thermometer to check that the internal temperature has reached 165°F (75°C). Once cooked, remove the chicken from the grill and allow it to rest for about 5 minutes.

      Prepare the Salad Base: In a large salad bowl, combine the mixed greens, cubed watermelon, red onion slices, and chopped mint leaves. Toss gently to mix the ingredients evenly.

        Slice the Chicken: After resting the chicken, slice it into thin strips.
