4 bone-in, skin-on chicken thighs

Zest and juice of 1 large orange

Zest and juice of 1 lemon

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a medium mixing bowl, combine the orange zest and juice, lemon zest and juice, minced garlic, olive oil, honey, smoked paprika, oregano, thyme, salt, and black pepper. Whisk together until well blended.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, but preferably overnight for maximum flavor.

      Preheat the Grill: About 15 minutes before grilling, preheat your grill to medium-high heat. If using charcoal, prepare for direct grilling.

        Grill the Chicken: Remove the chicken thighs from the marinade and allow any excess to drip off. Place the thighs skin-side down on the grill. Grill for about 5-7 minutes, or until the skin is crispy and golden brown.

          Flip and Cook: Turn the chicken thighs over and continue grilling for another 6-8 minutes, or until the internal temperature reaches 165°F (75°C). Avoid pressing down on the chicken to maintain juiciness.

            Rest and Serve: Once cooked, remove the chicken thighs from the grill and let them rest for about 5 minutes. Garnish with fresh chopped parsley before serving. Enjoy with grilled vegetables or a fresh salad!
