Grilled Chicken Pesto Wraps

Ingredients
  

2 boneless, skinless chicken breasts

1 cup basil pesto (store-bought or homemade)

4 large spinach or whole wheat tortillas

1 cup fresh spinach leaves

1 cup cherry tomatoes, halved

1/2 cup crumbled feta cheese

1/4 cup shredded mozzarella cheese

1 tablespoon olive oil

Salt and pepper to taste

Optional: Balsamic glaze for drizzling

Marinate the Chicken: Season the chicken breasts with salt, pepper, and a tablespoon of olive oil. Spread 1/2 cup of the pesto evenly on both sides of the chicken. Let it marinate for at least 30 minutes.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F). Remove from the grill and let it rest for 5 minutes before slicing.

      Prepare the Wrap: While the chicken rests, lay out the tortillas on a flat surface. Spread any remaining pesto evenly on each tortilla.

        Assemble the Wrap: On each tortilla, layer fresh spinach leaves, cherry tomato halves, sliced grilled chicken, crumbled feta cheese, and shredded mozzarella.

          Roll It Up: Tightly roll each tortilla, folding in the sides as you do so to encase the filling.

            Grill the Wraps (Optional): If desired, return the assembled wraps to the grill for an additional 2-3 minutes on each side until the tortillas are slightly crispy and the cheese is melted.
