Ingredients

1 lb (450g) boneless, skinless chicken breasts

1 cup barbecue sauce (your favorite brand)

1 pre-made pizza dough (or homemade)

1 tablespoon olive oil

1 cup shredded mozzarella cheese

1 cup red onion, thinly sliced

1 cup fresh cilantro, chopped

1 jalapeño, thinly sliced (optional for heat)

Salt and pepper to taste

Cornmeal (for dusting)

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper. Preheat your grill to medium-high heat. Grill the chicken for about 6-8 minutes per side, or until cooked through. Brush the chicken with 1/2 cup of barbecue sauce during the last few minutes of grilling for added flavor. Remove from the grill and let it rest for 5 minutes before slicing it into thin strips.

Prep the Dough: If using pre-made dough, allow it to come to room temperature as per package instructions. If making your own dough, roll it out to a circumference of about 12 inches. Dust a pizza stone or baking sheet with cornmeal to prevent sticking.

Assemble the Pizza: Preheat your grill to medium heat. On the pizza dough, spread the remaining 1/2 cup of barbecue sauce evenly. Evenly distribute the sliced grilled chicken over the sauce, followed by the shredded mozzarella cheese. Scatter the thinly sliced red onion and jalapeño (if using) across the top.

Grill the Pizza: Transfer the pizza onto the preheated grill, carefully sliding it from the baking sheet or stone. Close the grill lid and cook for 10-12 minutes or until the cheese is bubbly and golden brown, and the crust is slightly charred.

Finish with Cilantro: Carefully remove the pizza from the grill. Sprinkle the chopped cilantro over the top for a fresh flavor boost.

Serve: Let the pizza rest for a couple of minutes, then slice and serve it hot, along with extra barbecue sauce if desired.
