4 slices of whole-grain bread

4 large eggs

¼ cup heavy cream

1 cup shredded sharp cheddar cheese

½ cup green chilies (canned or roasted, chopped)

2 tablespoons fresh cilantro, chopped (optional for garnish)

¼ teaspoon salt

¼ teaspoon black pepper

1 teaspoon smoked paprika (optional)

1 tablespoon olive oil or melted butter (for greasing)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Bread Cups: Using a rolling pin, flatten each slice of bread to about 1/4 inch thick. Lightly grease a muffin tin with olive oil or melted butter. Press each flattened slice into a muffin cup, allowing the edges to rise above the rim to form a “cup”. Set aside.

      Mix the Egg Filling: In a bowl, whisk together the eggs, heavy cream, salt, black pepper, and smoked paprika until well combined. Then, gently fold in the shredded cheese and chopped green chilies.

        Fill the Cups: Pour the egg mixture evenly into each bread cup, filling them almost to the top (the mixture will expand as it cooks).

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is fully set and the bread edges are golden brown.
