Greek Yogurt Banana Oatmeal Muffins

1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

2 ripe bananas, mashed

1 cup plain Greek yogurt

2 large eggs

1/4 cup honey or maple syrup

1/4 cup unsweetened almond milk (or any milk of your choice)

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Stir until evenly mixed.

      Combine Wet Ingredients: In a separate bowl, mix the mashed bananas, Greek yogurt, eggs, honey (or maple syrup), almond milk, and vanilla extract until smooth and combined.

        Combine Mixtures: Pour the wet ingredient mixture into the dry ingredients. Stir gently, being careful not to overmix. If you are using chopped walnuts or pecans and chocolate chips, fold them in at this point.

          Fill Muffin Tin: Distribute the batter evenly among the muffin cups, filling each cup about 3/4 full.

            Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Cool and Enjoy: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack. Allow them to cool completely before enjoying.
