Greek Pasta Bake with Feta

12 oz (340g) penne pasta

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup crumbled feta cheese

1/2 cup black olives, pitted and sliced

1/4 cup fresh parsley, chopped (for garnish)

1/2 cup grated Parmesan cheese

1 cup marinara sauce (store-bought or homemade)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until translucent, about 3-4 minutes. Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until softened.

        Add Spinach and Herbs: Add the cherry tomatoes and chopped spinach to the skillet. Sprinkle in the dried oregano and thyme. Season with salt and pepper to taste. Cook until the spinach wilts and the tomatoes soften, about 2-3 minutes.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta with the sautéed vegetables and stir to combine. Add the crumbled feta cheese, sliced olives, and marinara sauce, mixing gently until everything is well-coated.

            Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13-inch (23x33 cm) baking dish. Evenly spread it out to ensure uniform cooking.

              Top with Parmesan: Sprinkle the grated Parmesan cheese over the top of the pasta. This will create a deliciously golden crust while baking.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                  Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
