Greek Chicken Gyro Bowls

For the Chicken Marinade:

1.5 lbs boneless, skinless chicken thighs

3 tablespoons olive oil

Juice of 1 lemon

4 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and black pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Juice of 1/2 lemon

Salt to taste

For the Bowl Assembly:

2 cups cooked rice or quinoa

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 red onion, thinly sliced

1 cup romaine lettuce, shredded

1/2 cup feta cheese, crumbled

Kalamata olives (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and black pepper. Add the chicken thighs and coat them well. Cover and refrigerate for at least 30 minutes, preferably 2-4 hours for maximum flavor.

    Prepare Tzatziki Sauce: In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and salt. Mix well and refrigerate it for at least 30 minutes to let the flavors meld.

      Cook the Chicken: Preheat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade and grill for about 6-8 minutes on each side or until cooked through and the internal temperature reaches 165°F (75°C). Once done, allow it to rest for a few minutes before slicing it into strips.

        Prepare the Bowls: In serving bowls, layer the cooked rice or quinoa as the base. Top with the sliced grilled chicken, cherry tomatoes, diced cucumber, red onion, shredded romaine lettuce, and crumbled feta cheese.

          Add Tzatziki Sauce: Generously drizzle the tzatziki sauce over the top of each bowl. Garnish with Kalamata olives if desired, and sprinkle with fresh parsley for an added touch of color.
