3 cups grated carrots (approximately 6 medium carrots)

1 cup crushed pineapple, drained

1/2 cup chopped walnuts (optional)

1/2 cup raisins (optional)

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

Zest of 1 lemon (optional, for added flavor)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until combined. Set aside.

      Combine Sugars and Oils: In another large bowl, mix the granulated sugar, brown sugar, and vegetable oil until well incorporated.

        Add Eggs: Add the eggs one at a time to the sugar-oil mixture, beating well after each addition until the mixture is light and smooth.

          Incorporate Dry Ingredients: Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Do not overmix.

            Add Carrots and Extras: Gently fold in the grated carrots, crushed pineapple, chopped walnuts, and raisins, ensuring all are evenly distributed in the batter.
