4 medium-sized Yukon Gold potatoes, scrubbed and dried

2 tablespoons olive oil

1 tablespoon ranch seasoning mix (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

Freshly cracked black pepper, to taste

2 tablespoons fresh chives, finely chopped (for garnish)

Optional: Grated Parmesan cheese, to sprinkle on top

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: Cut each Yukon Gold potato lengthwise into thick slabs, about ¾-inch thick. You should get 3-4 slabs from each potato, depending on their size.

      Season the Potatoes: In a large mixing bowl, combine the olive oil, ranch seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until well combined.

        Coat the Slabs: Add the potato slabs to the bowl and gently toss them in the oil and seasoning mixture, ensuring each slab is evenly coated.

          Arrange on Baking Sheet: Place the seasoned potato slabs on the prepared baking sheet in a single layer, leaving a little space between each slab for even roasting.

            Roast the Potatoes: Roast in the preheated oven for 25-30 minutes, flipping the slabs halfway through, until they are golden brown and crispy on the outside and tender on the inside.

              Garnish: Remove from the oven and let the potato slabs cool for a few minutes. Sprinkle with fresh chives and grated Parmesan cheese (if using) for a burst of flavor.
