1 medium cauliflower head, cut into bite-sized florets

1 cup all-purpose flour

1 teaspoon turmeric powder

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup sparkling water (or regular water for a less crispy texture)

Oil, for frying (vegetable or canola)

8 small corn or flour tortillas

1 avocado, sliced

1 cup shredded red cabbage

1/2 cup fresh cilantro, chopped

Lime wedges, for serving

Hot sauce or salsa, for serving

Instructions
 

Prepare the Cauliflower: Start by washing and cutting the cauliflower into small, bite-sized florets. Make sure they’re evenly sized to ensure even cooking.

    Make the Batter: In a large mixing bowl, combine the all-purpose flour, turmeric, garlic powder, cumin, smoked paprika, salt, and black pepper. Gradually add the sparkling water, whisking until you have a smooth batter. It should be thick enough to coat the cauliflower florets well.

      Heat the Oil: In a deep skillet or a heavy-bottomed pot, heat about 1-2 inches of oil over medium heat. You can test if it's ready by dropping a small amount of batter into the oil – if it sizzles and rises to the surface, it’s hot enough.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, making sure to coat it well. Let any excess batter drip off before carefully placing it in the hot oil. Fry in small batches to avoid overcrowding.

          Fry to Perfection: Fry the florets for about 3-4 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

            Warm the Tortillas: While the cauliflower cools slightly, warm the tortillas in a dry skillet for about 30 seconds on each side or until they are soft and pliable.
