Ingredients

For the Golden Coconut Shrimp:

1 lb (450g) large shrimp, peeled and deveined

1 cup all-purpose flour

2 large eggs, beaten

1 cup unsweetened shredded coconut

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

½ tsp salt

½ tsp black pepper

Oil for frying (coconut oil or vegetable oil)

For the Chili Honey Dip:

½ cup honey

2 tbsp chili sauce (adjust to taste)

1 tbsp soy sauce

1 tsp lime juice

1 clove garlic, minced

Pinch of salt

Instructions

Prepare Shrimp: If not already done, peel and devein the shrimp, patting them dry with paper towels to remove excess moisture. This helps the coating stick better.

Set Up Breading Station: In three separate bowls, place the flour, beaten eggs, and a mixture of shredded coconut, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.

      Bread the Shrimp:

        - Dip each shrimp first into the flour, coating evenly and shaking off excess.

          - Next, dip into the beaten eggs, ensuring it's fully coated.

            - Finally, dredge in the coconut-panko mixture, pressing gently to adhere the coating.

Heat the Oil: In a large pan or skillet, heat about ½ inch of oil over medium-high heat until it is shimmering but not smoking.

Fry the Shrimp: In batches (don’t overcrowd the pan), carefully place the coated shrimp into the hot oil. Fry for about 2-3 minutes on each side, or until they turn golden brown and crispy. Remove and drain on paper towels.

Make the Chili Honey Dip: In a small bowl, mix together the honey, chili sauce, soy sauce, lime juice, minced garlic, and a pinch of salt. Taste and adjust the chili sauce according to your spice preference.

Serve: Arrange the golden coconut shrimp on a serving platter. Serve with the chili honey dip on the side for a perfectly sweet and spicy combination.
