Golden Cajun Potato Hash with Chicken Bites

For the Chicken Bites:

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

1 tsp Cajun seasoning

1/2 tsp paprika

1/2 tsp garlic powder

Salt and pepper to taste

2 tbsp olive oil

For the Potato Hash:

4 medium Yukon gold potatoes, diced into 1-inch cubes

1 medium onion, chopped

1 bell pepper (any color), diced

3 cloves garlic, minced

2 tsp Cajun seasoning

1/2 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Optional: Hot sauce (for serving)

Instructions
 

Prepare the Chicken Bites:

    - In a bowl, combine the diced chicken, Cajun seasoning, paprika, garlic powder, salt, and pepper. Toss until the chicken is well coated.

      - In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the seasoned chicken bites and cook until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.

        Cook the Potato Hash:

          - In the same skillet, add an additional tablespoon of olive oil if necessary. Add the diced potatoes, season with salt, and pepper, and cook for about 5 minutes, stirring occasionally.

            - Add the chopped onion, bell pepper, garlic, additional 2 tsp Cajun seasoning, and smoked paprika. Stir well to combine and continue to cook for another 10-15 minutes, or until the potatoes are crispy and cooked through. Stir occasionally to prevent sticking.

              Combine Chicken and Hash:

                - Once the potatoes are tender and crispy, return the cooked chicken bites to the skillet and gently toss to combine with the hash. Cook for an additional 2-3 minutes to heat the chicken through.

                  Serve:

                    - Remove from heat and garnish with freshly chopped parsley. Serve hot, with hot sauce on the side for those who enjoy an extra kick.
