Ingredients

1 ½ cups all-purpose flour

2 tablespoons baking powder

½ teaspoon salt

¼ cup granulated sugar

2 large eggs

1 cup milk (can substitute with almond milk for a dairy-free option)

¼ cup unsalted butter, melted (plus extra for greasing)

1 teaspoon vanilla extract

½ cup maple syrup

½ cup chocolate chips or blueberries (optional)

½ teaspoon ground cinnamon (optional, for extra flavor)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a muffin tin by greasing each cup with butter or lining with muffin liners.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon until well blended. Set aside.

Combine Wet Ingredients: In another bowl, beat the eggs and then add the milk, melted butter, vanilla extract, and maple syrup. Mix until fully combined.

Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently. Be careful not to overmix; a few lumps are perfectly fine. If you're adding chocolate chips or blueberries, fold them in at this stage.

Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

Bake: Place the muffin tin in the preheated oven and bake for about 15-18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove the muffin tin from the oven and allow the pancakes muffins to cool in the pan for about 5 minutes. Then, carefully transfer them to a wire rack to cool completely. Serve warm and enjoy with a drizzle of maple syrup or a dollop of whipped cream if desired!
