When it comes to choosing pork chops for this recipe, bone-in cuts are highly recommended. Bone-in pork chops offer several advantages, primarily flavor and moisture retention during cooking. The bone helps to keep the meat juicy, preventing it from drying out in the oven, while also infusing additional flavor. The thickness of the chops is also essential; aim for at least 1-inch thick cuts to ensure that they cook evenly and remain tender.

Ingredients

4 bone-in pork chops, about 1 inch thick

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon dried oregano

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

1 tablespoon Dijon mustard

¼ cup olive oil

Lemon wedges (for serving)

Instructions

Preheat your oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the pork chops: Pat the pork chops dry with paper towels. Season both sides with salt and black pepper. Set aside.

Make the crust mixture: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, minced garlic, parsley, oregano, paprika, salt, and pepper. Mix well until fully combined.

Create the egg wash: In another bowl, whisk together the eggs and Dijon mustard until smooth.

Coat the pork chops: Dip each pork chop first into the egg wash, allowing excess to drip off, then press the chops into the Parmesan breadcrumb mixture. Ensure each chop is evenly coated, pressing down slightly to adhere the crust well.

Sear the pork chops: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the coated pork chops to the skillet (you may need to do this in batches, depending on the size of your skillet). Sear the pork chops for 3-4 minutes on each side until golden brown.

Bake the chops: Transfer the skillet (or place the pork chops directly on the lined baking sheet) to the preheated oven. Bake for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C) and the crust is crispy.

Rest and serve: Remove the pork chops from the oven and let them rest for about 5 minutes before serving. Serve with lemon wedges for a zesty finish.
