1 pound ground chicken

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

3 cloves garlic, minced

1 large egg

1/4 cup milk

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

1/2 cup marinara sauce (for topping)

Extra Parmesan cheese for garnish

Instructions
 

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, chopped parsley, minced garlic, egg, and milk. Mix until just combined; be careful not to overwork the mixture to keep the meatloaves tender.

      Add the seasonings: Stir in the Italian seasoning, salt, black pepper, and red pepper flakes (if using). Mix gently until everything is well incorporated.

        Shape the mixture: Divide the mixture into 4 equal portions and shape them into small loaves, placing them on the prepared baking sheet, leaving some space between each loaf.

          Top with marinara: Spoon a couple of tablespoons of marinara sauce over each meatloaf.

            Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the tops are slightly golden.

              Garnish with additional grated Parmesan cheese and fresh parsley before serving for a pop of color and flavor.
