4 cod fillets (about 6 ounces each)

1 cup cooked quinoa (preferably red quinoa for color)

1/2 cup panko breadcrumbs

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Quinoa Crust: In a large mixing bowl, combine the cooked quinoa, panko breadcrumbs, minced garlic, lemon zest, dried oregano, and olive oil. Season with salt and pepper. Mix until all the ingredients are well combined and resemble a crumbly mixture.
