4 medium russet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon sea salt

½ teaspoon black pepper

1 teaspoon dried rosemary

1 teaspoon dried thyme

¼ teaspoon paprika

¼ teaspoon red pepper flakes (optional for heat)

1 cup shredded cheese (cheddar or your choice)

¼ cup sour cream (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the russet potatoes under cold water to clean them. Pat them dry with a paper towel. Poke several holes in each potato with a fork to allow steam to escape during baking.

      Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until fork-tender. Remove from the oven and let cool slightly.

        Make the Garlic Herb Mixture: In a bowl, whisk together the olive oil, minced garlic, sea salt, black pepper, dried rosemary, dried thyme, paprika, and red pepper flakes (if using).

          Prepare the Potato Skins: Once cool enough to handle, slice each potato in half lengthwise. Carefully scoop out most of the flesh, leaving about ¼-inch of potato attached to the skin (you can save the flesh for another recipe like mashed potatoes).

            Season the Skins: Brush the inside and outside of each potato skin with the garlic herb mixture, ensuring even coverage.

              Roast the Potato Skins: Place the seasoned potato skins skin-side down on a baking sheet. Roast in the oven for 15-20 minutes, until they start to crisp up.

                Add Cheese: Remove the baking sheet from the oven and sprinkle shredded cheese into each potato skin. Return to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.

                  Serve: Remove the potato skins from the oven. Let them cool slightly before serving. Top with a dollop of sour cream and a sprinkle of fresh parsley for garnish.
