Garlic Butter Grilled Mushrooms

1 pound (450g) large cremini or portobello mushrooms

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

Juice of half a lemon

Preheat the Grill: Start by preheating your grill to medium-high heat.

    Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth to remove any dirt. If using portobello mushrooms, remove the stems and gills for a cleaner taste. Leave cremini mushrooms whole.

      Make the Garlic Butter: In a small saucepan over medium-low heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, but do not let the garlic brown. Remove from heat and stir in the chopped parsley, thyme, salt, pepper, and lemon juice.

        Marinate the Mushrooms: Place the cleaned mushrooms in a large mixing bowl. Drizzle the olive oil over them, and then pour the garlic butter mixture, ensuring all mushrooms are well-coated. Allow them to marinate for about 15 minutes for maximum flavor.

          Grill the Mushrooms: Lightly oil the grill grates to prevent sticking. Place the mushrooms, gill side down, directly onto the grill. Grill for about 4-5 minutes, then carefully flip them over and cook for another 4-5 minutes until they are tender and have nice grill marks.

            Serve: Once cooked, remove the mushrooms from the grill and place them on a serving platter. For an extra touch, sprinkle some grated Parmesan cheese on top while they are still warm.
